Green Spirulina vs. Blue Spirulina – Which Should You Choose?
Unicorn frappés, mermaid smoothies and ocean-blue smoothie bowls have taken over Instagram. Behind these striking colours isn’t synthetic dye, but a unique natural pigment: blue spirulina, also known as phycocyanin.
So what sets it apart from traditional green spirulina? What is each one best used for – and which fits better into a modern kitchen?
What is spirulina?
Spirulina comes from the microalgae Arthrospira platensis. After harvesting, it is dried and processed, then sold in different forms:
- Green spirulina – the whole algae, dried and ground into powder
- Blue spirulina (phycocyanin) – a concentrated extract of one of spirulina’s natural pigments
Green Spirulina – The Traditional Form
Green spirulina is the whole dried algae, so all of its natural components remain together.
